  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • ½ cup vegan butter (room temperature)
  • ½ cup + 2 tablespoons sugar
  • ¼ cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1½ cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped pecans

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let it thicken for about 5 minutes.
  2. In a large bowl, cream together room temperature vegan butter and sugars until fluffy. Add the flax egg, maple syrup, and vanilla; mix well.
  3. Whisk together flour, cinnamon, baking powder, and salt in another bowl. Gradually combine with the wet mixture until just mixed.
  4. In a separate bowl, combine chopped pecans with brown sugar and cornstarch.
  5. Preheat your oven to 350°F (175°C). Scoop cookie dough onto a lined baking sheet; create an indent in each ball and fill with the pecan mixture.
  6. Bake for 12–15 minutes until golden around the edges but soft in the center. Allow to cool before serving.
