  • 12 oz canned chickpeas (drained)
  • 1 tsp ground cumin
  • 1/2 tsp freshly ground black pepper
  • 1 tsp sea salt
  • 2 green onions, minced
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour (or chickpea flour)
  • 1/4 cup grapeseed oil (or other neutral oil, for frying)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1 tbsp lemon juice (from 1/2 lemon)
  • 2 tbsp fresh dill, minced

Instructions

  1. Drain and pat dry the canned chickpeas. Mash them in a bowl until coarse.
  2. Mix in ground cumin, black pepper, sea salt, minced green onions, minced garlic, flour, and egg until well combined.
  3. Heat grapeseed oil in a frying pan over medium-high heat.
  4. Shape the mixture into patties using about three tablespoons per patty.
  5. Fry the patties for 3-4 minutes per side until golden and crispy. Transfer to a wire rack.
  6. For the yogurt sauce, mix Greek yogurt, lemon juice, fresh dill, minced garlic, and sea salt in a bowl and chill.
  7. Serve warm patties with chilled yogurt sauce.
