  • 3 tbsp olive oil
  • 1 medium onion (minced)
  • 1 medium carrot (grated)
  • 3 large potatoes (cubed)
  • 4 cups spinach (chopped)
  • 1 zucchini (cubed)
  • 3 tbsp lemon juice
  • 4 eggs (hard-boiled and cubed)
  • 1/2 cup parsley or dill (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring chicken or vegetable broth to a boil. Add cubed potatoes and cook on medium-low heat until tender, about 15 minutes.
  2. Meanwhile, heat olive oil in a skillet over medium heat. Sauté minced onion and grated carrot until softened, about 10 minutes.
  3. Stir the sautéed mixture into the pot with potatoes along with cubed zucchini and chopped spinach. Cook for an additional 5–7 minutes.
  4. Add lemon juice, hard-boiled eggs, and chopped herbs to the pot; season with salt and pepper to taste.
