  • 1/2 cup dry white grape juice
  • 1 lb Yukon gold potatoes, quartered
  • 3 cups shredded turkey or chicken
  • 1 cup frozen peas
  • 2 cups low-sodium chicken broth
  • 3 carrots, peeled and cut into half moons
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 1/2 to 1 teaspoon black pepper, freshly ground, to taste
  • 2 cups water
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons kosher salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped chives (for garnish)
  • Fresh thyme leaves (for garnish, optional)

Instructions

  1. In a large pot, melt unsalted butter over medium heat. Add diced onion, celery, and leek; sauté until softened (about 2 minutes). Stir in flour and cook for an additional minute.
  2. Gradually add dry white grape juice while stirring to combine.
  3. Add quartered potatoes, seasoning with fresh thyme and sage. Pour in water and chicken broth; cover and bring to a boil.
  4. Reduce heat to simmer for about 10 minutes. Add carrots and simmer until vegetables are tender (about 5 more minutes).
  5. Stir in shredded turkey (or chicken) and frozen peas; heat through for about 3 minutes.
