  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 teaspoon Dijon mustard (optional)
  • Salt and black pepper, to taste
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the cauliflower by boiling salted water in a large pot. Cook florets for 5-6 minutes until tender but not mushy. Drain and set aside.
  2. In a saucepan over medium heat, melt butter and whisk in flour for about one minute to make a roux. Gradually add warmed milk while stirring until thickened (about 4-5 minutes).
  3. Stir in Dijon mustard, nutmeg, salt, and pepper. Mix in cheddar and Parmesan until smooth.
  4. Preheat oven to 400°F (200°C). Layer cooked cauliflower in a baking dish and pour cheese sauce over it. Add extra cheddar on top.
