  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz/400 ml) unsweetened coconut milk (full fat)
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice
  • 20 gyozas (or potstickers)
  • Chopped chives (for serving)
  • Your favorite vegetables (optional, for serving)

Instructions

  1. Prepare your ingredients by grating garlic and ginger.
  2. In a large pot, heat vegetable oil over medium heat. Sauté garlic and ginger until fragrant, about 30 seconds.
  3. Add chicken broth and coconut milk, stirring to combine. Incorporate soy sauce, fish sauce, sesame oil, brown sugar, curry paste, and lime juice. Bring to a boil, then reduce heat to simmer for 5 minutes.
  4. Cook gyozas in boiling salted water according to package instructions (about 2-3 minutes). Drain well.
  5. Serve gyozas in bowls and ladle the hot soup over them. Garnish with chopped chives.
