  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice: Rinse the rice under cold water until clear. Combine with water or chicken broth in a pot, bring to a boil, then simmer covered for about 15 minutes until liquid is absorbed.
