  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges

Instructions

  1. Rinse the rice under cold water. In a medium pot, combine the rice with water or broth. Bring to a boil, then simmer covered for about 18 minutes until tender.
  2. Meanwhile, heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned. Stir in taco seasoning.
  3. Once seasoned, mix in black beans and corn; heat through for about 5 minutes.
  4. Fluff cooked rice and serve in bowls topped with meat mixture, tomatoes, lettuce, cheese, and salsa.
