  • 34 fresh peaches (diced)
  • 1 cup blueberries
  • ¼ cup pepitas (toasted)
  • 1 lemon (for massaging the kale)
  • 4 lemons (juiced for vinaigrette)
  • 2 Tbsp + 2 tsp honey
  • ¼ cup olive oil
  • Cracked black pepper to taste

Instructions

  1. Preheat oven to 375°F. Spread pepitas on a baking pan and toast for about 5-6 minutes until golden.
  2. Whisk together lemon juice, honey, olive oil, and cracked black pepper in a bowl; set aside.
  3. Massage chopped kale with olive oil and juice from one lemon for about 5 minutes until softened.
  4. Prepare peaches and blueberries by rinsing them.
  5. Combine massaged kale, diced peaches, and blueberries in a bowl. Drizzle with vinaigrette and gently toss.
  6. Serve individual portions topped with toasted pepitas.
