  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse mini pumpkins under cool water, cut off the tops, and scoop out seeds and pulp.
  3. In a pan over medium heat, sauté onion and garlic in olive oil until fragrant (3-5 minutes).
  4. In a bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, spices, salt, pepper, and herbs.
  5. Oil a casserole dish or skillet. Place pumpkins inside and fill them with the beef mixture. Replace tops.
  6. Roast in the oven for about 30-35 minutes until soft and fragrant.
  7. Let cool slightly before serving hot.
