Ingredients

Scale
  • 2 ribeye or sirloin steaks (8 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk (or plant-based milk for a dairy-free option)
  • Salt and pepper, to taste
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Start by boiling your sweet potato chunks in a large pot of salted water until they’re fork-tender—about 15-20 minutes. Drain them well before moving on.
  2. In the same pot or a mixing bowl, add your drained sweet potatoes along with butter (or olive oil), cream (or coconut milk), salt, pepper, and cinnamon if using. Mash everything together until smooth and creamy. Taste it—feel free to adjust seasoning as needed!
  3. While your sweet potatoes are cooking, heat olive oil in a skillet over medium-high heat. Season your steaks generously with salt, pepper, and garlic powder. Sear them in the hot skillet for about 4-5 minutes per side for medium-rare. Adjust cooking time according to your preferred doneness.
  4. In a food processor or blender, combine parsley, cilantro, oregano (or basil), lemon juice, extra virgin olive oil, apple vinegar, minced garlic, chili flakes if desired, salt, and pepper. Blend until smooth.
  5. Plate your mashed sweet potatoes alongside your perfectly cooked steak. Drizzle the green sauce over everything and enjoy!
