  • 450g (1 lb) flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 2 tbsp butter
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 2 cups broth or water
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped

Instructions

  1. Prepare the steak by patting it dry and seasoning with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the seasoned steak in a hot skillet for 4-5 minutes on each side until cooked to your liking; let rest before slicing.
  3. Rinse the rice under cold water. In a pot, heat olive oil, toast the rice with garlic powder, then add broth/water and cook until fluffy.
  4. In the same skillet used for the steak, melt butter and sauté garlic before adding whole milk. Gradually stir in cheeses until smooth and season.
  5. Assemble by layering rice on plates topped with sliced steak and queso sauce; garnish with cilantro, lime wedges, avocado slices.
