  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper in a bowl.
  2. In a mixer, beat butter until smooth; then add brown sugar, molasses, and pumpkin puree. Mix well.
  3. Add the egg to the mixture and combine thoroughly.
  4. Gradually incorporate dry ingredients until just combined (do not overmix).
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  7. Roll chilled dough into balls, coat in sugar, and flatten slightly before placing on sheets.
  8. Bake for 12-14 minutes until tops feel set; then cool on racks.
