  • 1.5 lbs sirloin or ribeye steak (cubed)
  • 4 large Russet or Yukon Gold potatoes (thinly sliced)
  • 2 cups sharp cheddar cheese (freshly grated)
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1 medium onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 tbsp butter
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt (plus more to taste)

Instructions

  1. Sear the cubed steak in a skillet with butter until browned.
  2. Layer half of the sliced potatoes in the slow cooker.
  3. Add half of the diced onion and minced garlic on top of the potatoes.
  4. Place seared steak cubes over the onions and garlic, then layer remaining potatoes, onions, and garlic.
  5. Pour beef broth and heavy cream over all layers; season with salt and pepper.
  6. Top with freshly grated cheddar cheese.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are fork-tender.
  8. Let it rest for 5-10 minutes before serving.
