  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion for 3-4 minutes until softened.
  2. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Transfer the onion and garlic mixture to the slow cooker. Layer the chicken breasts on top.
  4. Sprinkle thyme, rosemary, lemon zest, salt, and pepper over the chicken.
  5. Add uncooked rice around the chicken and pour in the chicken broth until rice is submerged.
  6. Drizzle fresh lemon juice over the mixture. Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
