  • 3 pounds Beef chuck roast (sliced thin and cut into pieces)
  • 1 Small onion (diced (about 1 cup))
  • 3 cloves Garlic (minced)
  • 15 ounces Canned light red kidney beans (drained and rinsed)
  • 15 ounces Canned dark red kidney beans (drained and rinsed)
  • 8 ounces Canned tomato sauce
  • 15 ounces Canned fire roasted diced tomatoes
  • 2 cups Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground black pepper

Instructions

  1. In a large Dutch oven, heat the olive oil over medium-high heat. Add in those thinly sliced chuck roast pieces along with diced onion. Sauté until the meat is browned and cooked through, and the onion becomes tender.
  2. Stir in minced garlic during the last minute of cooking.
  3. Once you've drained off any excess fat from your meat mixture, return it to the Dutch oven. Now it's time to add all those wonderful beans, tomato sauce, diced tomatoes, beef broth, and seasonings. Stir everything together until well combined.
  4. Bring your chili mixture to a gentle simmer before carefully transferring it into your slow cooker.
  5. Cover your slow cooker and let it work its magic on low heat for about 4-6 hours.
