  • 2 lbs beef chuck (cut into 2-inch cubes)
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups carrots (sliced)
  • 8 oz mushrooms (quartered)
  • 1 cup pearl onions (peeled)
  • 2 cups apple vinegar
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season beef chunks with salt and pepper; brown in batches until golden on all sides. Transfer to the slow cooker.
  2. In the same skillet, sauté chopped onions for about 5 minutes until soft; add minced garlic for the last minute. Transfer mixture to the slow cooker with the beef.
  3. Add sliced carrots, quartered mushrooms, and peeled pearl onions to the slow cooker.
  4. In a bowl, whisk together apple vinegar, beef broth, tomato paste, thyme, and flour until smooth; pour over beef and vegetables.
  5. Cover and cook on low for 7-8 hours or high for 4.5-5 hours until beef is tender.
  6. Remove bay leaves before serving; garnish with chopped parsley.
