  • Juice of 2 limes

  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 cup red onion (finely chopped)
  • 1 medium tomato (diced)
  • 0.25 cup fresh cilantro (chopped)
  • 1 small jalapeño (finely diced, optional)
  • Salt to taste (for mango salsa)
  • 0.25 cup mayonnaise (for lime-chili sauce)
  • 1 tablespoon lime juice (for sauce)
  • 1 teaspoon honey
  • 1 teaspoon chili garlic sauce (sambal oelek or sriracha)
  • 1 tablespoon water (to thin sauce if needed)
  • Pinch of salt (for lime-chili sauce)
  • Extra lime wedges (for garnish)
  • Fresh cilantro or green onion (for topping, optional)

Instructions

  1. Marinate shrimp in olive oil, smoked paprika, cumin, chili powder, garlic powder, salt, and juice from 1 lime for 15–20 minutes.
  2. Cook rice according to package instructions.
  3. Prepare mango salsa by mixing diced mango, tomato, red onion, cilantro, jalapeño (if using), lime juice, and salt; chill in the fridge for at least 10 minutes.
  4. Make the Lime-Chili Sauce by whisking together mayonnaise, lime juice, honey, chili garlic sauce, and a pinch of salt; add water if needed for desired consistency.
  5. Grill marinated shrimp on medium-high heat for about 2–3 minutes per side until opaque.
  6. Assemble bowls with rice as the base topped with shrimp, avocado slices, mango salsa, and drizzle with Lime-Chili Sauce.
