  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix until softened. Add garlic and cook briefly.

  4. In another pot, melt remaining butter and whisk in flour; gradually add milk to create a creamy mixture.
  5. Combine the creamy mixture with the soup pot and stir in cheese until melted. Return sausage to the pot and adjust seasoning.
