  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)

Instructions

  1. Preheat oven to 400°F (200°C). Spread shredded coconut on a baking sheet and toast for about 5-10 minutes until golden brown.
  2. In a food processor, blend pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract until combined into a dough.
  3. Roll the mixture into 16 bite-sized balls using clean hands.
  4. Coat each ball in the remaining shredded coconut for added crunch.
  5. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
