  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider (or use 1 tsp of lemon juice if you don't have cider)
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon for crumble
  • 1/4 tsp nutmeg for crumble
  • 1/8 tsp allspice for crumble
  • 1/8 tsp ground cloves for crumble
  • 1/4 cup salted butter, melted for crumble
  • 1/4 cup light brown sugar, packed for crumble
  • 1 and 1/2 tbsp granulated sugar for crumble
  • 1/2 cup + 1 tbsp all-purpose flour for crumble
  • 3/4 tsp cinnamon for crumble
  • Pinch of salt for crumble

Instructions

  1. Cream softened butter with granulated and brown sugars until light and fluffy.
  2. Add vanilla extract and eggs, mixing until well blended.
  3. Gradually incorporate flour, baking soda, baking powder, spices, and salt to form a dough. Chill for at least 30 minutes.
  4. Prepare apple filling by cooking diced apples with butter, apple cider (or lemon juice), brown sugar, and spices until tender.
  5. For the crumble topping, mix melted butter with remaining ingredients until crumbly.
  6. Preheat oven to 365°F (185°C). Roll chilled dough into balls and place on lined baking sheets.
  7. Bake until edges are set but centers are slightly underdone; allow cooling.
  8. Fill each cookie center with apple filling, top with crumble, and drizzle with salted caramel sauce before serving.
