  • 1 pound cherry tomatoes
  • 1 head of garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese (or dairy-free alternative)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry cherry tomatoes. Place in a bowl and drizzle with 2 tablespoons olive oil, salt, pepper, and red pepper flakes. Toss well.
  3. Slice off the top of the garlic head to expose cloves.
  4. Line a baking sheet with parchment paper; spread tomatoes in a single layer and place cut garlic on the sheet.
  5. Roast for 25-30 minutes until tomatoes blister and garlic softens.
  6. Meanwhile, boil a pot of salted water and cook pasta according to package instructions until al dente. Reserve about 1 cup pasta water before draining.
  7. Once roasted, squeeze garlic into a mixing bowl and mash with tomatoes.
  8. Combine mashed mixture with drained pasta; add reserved pasta water for desired consistency.
  9. Stir in fresh basil and serve topped with grated cheese.
