  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper to create the marinade.
  2. Place the chicken in a resealable bag or bowl and coat it well with the marinade. Seal and marinate in the refrigerator for at least 30 minutes or overnight for deeper flavor.
  3. Preheat your oven to 425°F (220°C).
  4. Transfer the marinated chicken to a roasting pan with quartered onions and leftover marinade. Add chicken broth to the pan.
  5. Roast for about 1 hour and 15 minutes or until golden brown and cooked through. Baste occasionally to keep it juicy.
  6. Let rest for 10 minutes before carving.
