  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice
  • 2 teaspoons maple syrup
  • 2 teaspoons mustard
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. Trim the stems and remove any brown leaves from the Brussels sprouts. Rinse under cold water and pat dry.
  3. Halve each sprout and place them on the baking tray. Drizzle with ½ tablespoon of olive oil, sprinkle with salt and pepper, and toss until evenly coated.
  4. Roast in the preheated oven for 20-25 minutes until golden brown and tender.
  5. While roasting, prepare the dressing by combining 2 tablespoons of olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and pepper in a jar. Shake well to mix.
  6. Once roasted, transfer Brussels sprouts to a serving platter and drizzle with dressing before serving.
