  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved (some whole for garnish)
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons whole grain mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 garlic clove, minced
  • 1 teaspoon honey (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place trimmed asparagus and halved radishes on a baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat.
  3. Roast in the oven for 20–25 minutes, turning halfway through until golden brown and tender.
  4. While roasting, whisk together whole grain mustard, Dijon mustard, apple cider vinegar, minced garlic, remaining olive oil, and honey (if using) in a bowl.
