  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 4 tbsp olive oil
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine asparagus and radishes. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Roast in the oven for 20–25 minutes until tender and lightly browned.
  4. While vegetables roast, whisk together whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, remaining olive oil, and adjust seasoning to taste.
