  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup diced turkey or chicken
  • 1 cup diced potatoes
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until fragrant.
  2. Add beef broth, diced potatoes, sauerkraut, turkey or chicken, caraway seeds, and thyme. Simmer for 15–20 minutes until potatoes are tender.
  3. Lower heat and stir in heavy cream and Swiss cheese until melted and creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.
