  • 16 ounces Italian sausage or ground turkey

  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with salt and pepper until translucent (3-4 minutes).
  3. Add minced garlic and Italian seasoning; sauté for 30 seconds.
  4. Add Italian sausage or ground turkey; cook until browned, crumbling as you go.
  5. Pour in chicken broth and crushed tomatoes; season with salt and pepper, then simmer.
  6. Stir in ravioli; cook until al dente (3-5 minutes).
  7. Mix in fresh spinach and heavy cream until warmed through.
  8. Taste and adjust seasoning; garnish with shaved Parmesan and parsley before serving.
