  • 5 egg yolks
  • ⅓ cup granulated sugar
  • ⅔ cup pumpkin puree
  • 2 teaspoons vanilla bean paste
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • tiny pinch ground cloves

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan over medium heat, combine heavy cream and vanilla bean paste until heated through.
  3. In a bowl, whisk together egg yolks and granulated sugar until blended. Gradually add the warm cream mixture while whisking continuously.
  4. Fold in pumpkin puree and spices (salt, cinnamon, ginger, nutmeg, cloves).
  5. Pour the custard into hollowed-out mini pumpkins placed in a baking dish with hot water (halfway up the sides).
  6. Bake for 60-65 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least 4 hours.
  7. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
