2 double shots of blonde espresso
¼ cup packed light brown sugar
2 tbsp pumpkin puree
Cold oat milk (to taste)
1–2 cups ice cubes
Cinnamon sticks or pumpkin pie spice
Instructions
Prepare the syrup by whisking together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water in a saucepan until thickened.
Stir in vanilla and maple extracts; let cool.
In a jar, combine one double shot of espresso and 1-2 tablespoons of syrup with ice; shake vigorously.
Pour over ice in a glass and add oat milk as desired. Dust with extra spice before serving.
