  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk), plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 to 3 teaspoons buttermilk (for glaze)
  • Optional: spices like ginger or cardamom

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt until well combined.
  3. Cut in the cold butter until crumbly.
  4. Stir in the pumpkin purée, buttermilk, and vanilla extract until just combined.
  5. Transfer the dough to a floured surface and gently fold it over; pat into an 8-inch circle and cut into wedges.
  6. Place on the baking sheet and freeze for about 15 minutes.
  7. Brush with buttermilk before baking for 13-15 minutes until golden brown.
  8. For the glaze, combine powdered sugar with buttermilk and vanilla until smooth; drizzle over cooled scones.
