  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until mixed well.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared dish to form the crust.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle the remaining crumble mixture over the top and bake for 30-35 minutes until golden brown.
  7. Let cool completely before slicing into squares.
