  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C). If using mini pumpkins, cut off the tops and scoop out the seeds.
  2. In a bowl, whisk together egg yolks and granulated sugar until thickened. Add pumpkin puree, vanilla extract, spices, and salt; mix well.
  3. Heat heavy cream in a saucepan until steaming (do not boil). Gradually whisk into the pumpkin mixture.
  4. Pour the custard into mini pumpkins or ramekins and place them in a baking dish filled with hot water. Bake for about 30 minutes until set but slightly jiggly.
  5. Chill in the refrigerator for at least two hours or overnight.
  6. Before serving, sprinkle an even layer of sugar on top and caramelize using a kitchen torch or under a broiler.
