  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. In a small saucepan over medium heat, cook the pumpkin puree for about 10 minutes until reduced. Let cool.
  2. In a large bowl, cream the butter with brown and granulated sugar until fluffy. Add cooled pumpkin and vanilla; mix well.
  3. In another bowl, whisk together flour, cornstarch, baking soda, salt, and pumpkin pie spice.
  4. Gradually combine dry ingredients with wet mixture and fold in chocolate chips.
  5. Roll dough into balls and chill for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Bake cookie balls for 10-12 minutes until edges are set but centers are soft.
  7. Cool on baking sheets for several minutes before transferring to a cooling rack.
