  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cup canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, mix canola oil, granulated sugar, light brown sugar, eggs, pumpkin puree, and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into a greased loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. For the frosting, beat cream cheese and butter until smooth; add vanilla and powdered sugar gradually.
  7. Once cooled, frost the pumpkin bread generously.
