  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and sauté until softened, about 3–4 minutes.
  3. Stir in chili powder, ground cumin, smoked paprika, salt, and pepper; mix well.
  4. Add cooked pinto beans, diced tomatoes with green chilies, diced green chilies, and beef broth. Stir to combine.
  5. Bring to a boil; then reduce heat and cover. Let simmer for about 30 minutes.
  6. Taste and adjust seasoning as needed. For creaminess, mash some beans against the pot.
  7. Serve hot with optional cilantro or lime wedges.
