  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ¼ tsp black pepper
  • 4 slices fresh mozzarella
  • ¼ cup basil pesto
  • 2 tbsp balsamic glaze
  • ½ lemon (juice)
  • 1 cup diced tomatoes
  • 2 tbsp basil leaves (thinly sliced)
  • 1 garlic clove (grated)
  • ½ tsp red pepper flakes
  • 1 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Combine diced tomatoes, basil leaves, grated garlic, olive oil, red pepper flakes, salt, and pepper in a bowl to create the bruschetta topping.
  2. Rub chicken breasts with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
  3. Cook the chicken in a skillet over medium-high heat for 5-7 minutes per side until golden and cooked through. Squeeze half a lemon over the chicken during cooking.
  4. Place mozzarella slices on top of each chicken breast and cover to melt the cheese.
  5. Assemble by topping each breast with pesto and bruschetta mixture; drizzle balsamic glaze before serving.
