  • 1/2 cup creamy peanut butter
  • 2/3 cup packed brown sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just mixed. Fold in zucchini and chocolate chips.
  5. Pour batter into the prepared pan and bake for about 55–70 minutes or until a toothpick comes out clean.
  6. Allow cooling in the pan for an hour before transferring to a wire rack.
