  • 2 lbs red potatoes
  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a baking pan containing 1 stick of butter inside to melt.
  2. While the butter melts, wash and halve the red potatoes, scoring each half for better flavor absorption.
  3. In a bowl, mix Parmesan cheese with herb seasoning, salt, and pepper.
  4. Once melted, sprinkle the seasoning mix in the pan. Place potatoes cut side down on top.
  5. Lightly spray potato tops with nonstick cooking spray and add any remaining seasoning.
  6. Bake uncovered for about 40 minutes until golden brown and fork-tender.
