  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 pound large shrimp (peeled and deveined)
  • Salt and freshly ground black pepper (to taste)
  • 3 cloves garlic (minced)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white grape juice
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh lemon juice
  • Zest from 1 lemon
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season shrimp with salt and pepper, then cook for 2-3 minutes on each side until pink and opaque. Remove from skillet.
  3. Lower heat to medium and add remaining olive oil. Sauté minced garlic and red pepper flakes for about 1 minute until fragrant.
  4. Add grape juice, simmer for 2-3 minutes to reduce slightly.
  5. Stir in chicken broth, bring to a boil, then add cooked orzo along with Parmesan cheese, butter, lemon juice, and zest. Mix until creamy.
  6. Return shrimp to skillet, tossing gently for an additional minute until heated through.
  7. Serve garnished with chopped parsley.
