  • 1 lb chicken sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, heat olive oil. Add the chicken sausage and cook until browned. Remove and set aside.
  2. Sauté onion and garlic in the same pot until softened and fragrant.
  3. Stir in diced tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
  5. Reduce heat to low; stir in heavy cream and Parmesan cheese until melted and smooth.
  6. Season with salt and pepper to taste; garnish with fresh parsley before serving.
