  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Let the chicken sit at room temperature for 30-60 minutes to promote even cooking. Preheat oven to 425ºF (218ºC).
  2. Line a baking dish with parchment paper for easy cleanup.
  3. Place the chicken breast side up in the pan, remove giblets, and pat dry.
  4. Stuff the cavity with halved onion for moisture.
  5. In a bowl, mix avocado oil, salt, paprika, onion powder, thyme, garlic powder, and black pepper to form a paste.
  6. Brush the paste all over the chicken.
  7. Roast in preheated oven for 70-90 minutes until internal temperature reaches at least 165ºF (74ºC). Baste once or twice if desired.
  8. Let rest for five minutes before carving and serving.
