  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Season salmon fillets with salt, pepper, garlic powder, and paprika.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear salmon for 3-4 minutes on each side until golden. Remove from skillet.
  3. Sauté minced garlic and chopped onion in the same skillet until soft.
  4. Stir in thyme and orzo; toast for 1 minute.
  5. Add chicken broth; bring to a boil and simmer until liquid absorbs (about 8 minutes).
  6. Stir in spinach, lemon juice, and Parmesan until combined.
  7. Return salmon to skillet for an additional 2 minutes to warm through before serving.
