Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces seasoned with salt, pepper, smoked paprika, and garlic powder. Cook until browned and cooked through (5-7 minutes). Remove from skillet.
  2. Pour chicken broth into the skillet to deglaze, scraping up brown bits.
  3. Stir in honey BBQ sauce and simmer for 2-3 minutes.
  4. Add uncooked penne pasta and enough water to barely cover it (about 1 to 1½ cups). Cover and simmer for 12-15 minutes until pasta is tender.
  5. Return the chicken to the skillet and mix well; simmer for another 2-3 minutes. Adjust seasoning as needed.
  6. Serve hot, garnished with parsley.
