  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 ½ cups uncooked long grain rice
  • 2 ½ cups chicken broth
  • ½ cup barbecue sauce
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Olive oil, salt, and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the sausage slices until browned; remove and set aside.
  2. In the same pan, add more oil if needed and sauté the chopped onion for about 5 minutes until translucent.
  3. Stir in minced garlic and cook until fragrant (about 30 seconds).
  4. Add uncooked rice, stirring to coat with onion and garlic; toast for 2–3 minutes until lightly golden.
  5. Pour in chicken broth and barbecue sauce (and soy sauce if using). Scrape any bits from the bottom of the pan.
  6. Return seared sausage to the pan, bring to a simmer, cover with a lid, and reduce heat to low.
  7. Let simmer for about 18–20 minutes, stirring halfway through.
  8. Turn off heat; let sit covered for an additional 5 minutes before fluffing rice with a fork.
