  • 4 ounces turkey strips, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ cup Parmesan cheese, grated
  • 2 large egg yolks, whisked
  • 2 tablespoons unsalted butter
  • ¼ cup extra Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped
  • Cracked black pepper, to taste
  • 1 teaspoon salt (for boiling water)
  • 1 teaspoon black pepper

Instructions

  1. Cook the ravioli in salted boiling water according to package instructions until they float; drain and set aside.
  2. In a skillet over medium heat, sauté diced turkey strips until golden brown. Add minced garlic and cook for 1 minute.
  3. Pour in heavy cream and milk; stir in Parmesan cheese, black pepper, and salt. Simmer until slightly thickened.
  4. Whisk egg yolks in a bowl, then temper them by slowly mixing in half of the hot sauce before returning it to the skillet.
