  • 1 cup all-purpose flour
  • 1 cup light or dark brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 1 tablespoon vanilla
  • 56 peaches, cut into wedges
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 375°F.
  2. Place cubed butter in a baking dish and melt in the oven for about 10 minutes.
  3. In a bowl, mix flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt. Stir in milk and vanilla until just combined.
  4. Toss peach wedges with remaining brown sugar and maple syrup.
  5. Layer half of the peaches over melted butter, pour batter on top without stirring, and finish with remaining peaches.
  6. Bake for 50-55 minutes until golden brown and set in the center.
  7. For the maple butter drizzle, combine butter and maple syrup in a pan over medium heat; boil for two minutes.
  8. Serve warm with ice cream or whipped coconut cream.
