  • 2 pounds pot roast (or lean ground beef)
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend (or chopped onions)
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 32 oz beef broth
  • 2 cans tomato soup
  • Salt and pepper to taste

Instructions

  1. Season the pot roast with salt and pepper. Place it in your slow cooker with half a can of beef broth and cook on LOW for about 10 hours until tender. Shred the beef once cooked.
  2. In a large pot, heat oil over medium heat. Sauté chopped carrots and seasoning blend until tender.
  3. Combine shredded beef, potatoes, frozen veggies, remaining broth, tomato soup, and water in the pot. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and cover. Simmer for about an hour.
  5. Adjust consistency by adding more water if desired before serving.
