  • 10 oz mushrooms (button or baby bella)
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube (or 1 tsp better than bouillon)
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ½ cup dry white grape juice
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • ⅓ cup heavy cream

Instructions

  1. Sauté sliced mushrooms in melted butter over medium heat until golden brown. Season with salt and pepper.
  2. Season chicken breasts with salt and pepper, and lightly dredge in flour.
  3. In the same skillet, add olive oil and cook the floured chicken until golden brown on both sides; remove from pan.
  4. Create the sauce by whisking in more flour, then gradually add beef broth while scraping any browned bits. Add bouillon cube, soy sauce, onion powder, mustard powder, thyme, grape juice, minced garlic, and cornstarch mixture.
  5. Return cooked chicken to the skillet along with sautéed mushrooms; let simmer for about 15 minutes.
  6. Stir in heavy cream and simmer for a few more minutes until creamy.
