  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • 1 1/2 cups dry white grape juice
  • 2 tbs butter
  • 2 tbs olive oil
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1/2 cup seasoned flour
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)

Instructions

  1. Pound chicken breasts to even thickness and season with salt and pepper.
  2. Heat butter and olive oil in a skillet over medium heat; sauté chicken until golden brown on both sides, about 5 minutes per side.
  3. Remove chicken; add mushrooms and garlic to the skillet; sauté until browned.
  4. Deglaze pan with grape juice, add thyme sprigs, then return chicken to the skillet.
  5. Simmer covered for 15-20 minutes.
  6. Stir in heavy cream and asiago cheese until melted; return chicken to sauce to warm through.
  7. Serve garnished with fresh thyme over pasta or rice.
